
Roasted bell, tomato, chicken baked in rotel ;) and zucchini spaghetti!! And the best part of all !!! The added pesto!!!! Oh my gosh y'all have to make this!!! So healthy and hit taste buds you didn't even know you had!!! I loved this! My husband isn't a fan of the pesto :( he's just not a pesto guy. Weird..

Ingredients
3 boneless chicken breast
4 zucchinni
4 green bell peppers
1 can of rotel (medium)
roma tomatoes. I cut up one for my plate.
2 Tablespoons of pesto(recipe here) per serving
Directions:
1. Take out the seeds of the peppers and roast the peppers on a cookie sheet with foil at 450 for about 15 min depending on how soft you like them or hard. I spray them with non stick spray before sticking them in ;).
2. After the peppers are done I cut them up. Then put the oven to 350 and cut your chicken into strips and place in a baking dish(mine was glass). Season with garlic powder, onion powder, pepper, a little chili powder, then top with rotel. bake at 350 for about 12 min then turn the oven up to 375 and bake for about 3-5 more min or until chicken is cooked.
3. I used a tool that helped me turn my zucchini into noodles. I boil the noodles in water for probably too long.. I think I might just sautee the zucchini next time.
4. cut up a roma tomato and put it all together and top with pesto ;)
