Tortilla chip scramble

Love this recipe!! so easy different and so good!!! I can't wait to make it again! I did 86 the green onion chive things... not into them :/.

1. combine 1 egg + 1 egg white, hot sauce, and salt & pepper in a bowl, and whisked it all up.
2. While I quickly cooked my eggs in a skillet on the stove, I simultaneously warmed a serving of yellow corn tortilla chips in 1/2 cup red enchilada sauce in another skillet. (LOVE these chips – restaurant quality for $2!)
3. Pour the warmed and saucy chips in a bowl, then add your eggs. Top with cheese, avocado and salsa – and you are set!

Fiesta Bake

1 lb extra-lean ground beef or turkey (used turkey)
1 clove garlic, minced (used onion powder)
1 onion, diced — or in our family onion powder
1/2 tsp salt
1/4 tsp pepper
1 10-oz can enchilada sauce, mild or hot(I used hot)
1 8-oz can tomato sauce, no salt added
1 can black beans, drained and rinsed
1 can chili beans or pinto beans, drained and rinsed(used pinto)
1 17-oz can corn, undrained
1 large zucchini, shredded (ummm didn't use zucchini but definately will next time!)
1 4 1/4-oz can chopped olives (didn't use these)
8-10 corn tortillas, torn into quarters
1/2 cup finely shredded cheddar cheese, reduced-fat (I used fat free)

Brown turkey meat. Drain of grease. Season with salt and pepper, garlic powder and onion powder (I probably should have used some more seasoning... it lacked a tad bit in the taste with me, but my husband didn't say anything ;) he loved it!). Add sauces, beans, corn, zucchini and olives. Place 1 cup (umm I put 3 cups for the 1st layer) meat mixture in the bottom of a large casserole dish or two smaller ones. Add a layer of the torn corn tortillas. Repeat layers until meal mixture and tortillas are used, ending with the meat mixture.

Cover and bake at 350 or 30 minutes. Sprinkle with cheese and let stand 10 minutes before serving.

Makes 12 servings. 235 calories per serving. (trainermomma said this)

**When I don’t have zucchini, I have used yellow squash, chopped spinach, or shredded sweet potatoes. They all work. (this is what trainermomma said)

Spinach and Chicken Skillet

4 Servings Prep/Total Time: 30 min.
Ingredients
2 cups uncooked yolk-free whole wheat noodles
2 cups sliced fresh mushrooms
2 teaspoons olive oil
1 garlic clove, minced
1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
3/4 cup Hunt’s® Spaghetti Sauce Traditional
2 cups cubed cooked chicken breast
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/4 cup shredded Parmesan cheese
1-1/2 teaspoons Italian seasoning
1/2 cup shredded part-skim mozzarella cheese
Directions
Cook noodles according to package directions. Meanwhile, in a large skillet, saute mushrooms in oil until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, soup, spaghetti sauce, chicken, spinach, Parmesan cheese and Italian seasoning. Cook for 5-8 minutes or until heated through, stirring occasionally.
Drain noodles; toss with chicken mixture. Sprinkle with mozzarella cheese. Yield: 4 servings.




Nutrition Facts: 1-1/2 cups equals 389 calories, 12 g fat (4 g saturated fat), 73 mg cholesterol, 821 mg sodium, 38 g carbohydrate, 7 g fiber, 35 g protein.

Pizza Dough- Bread Machine

Finally! Nailed it with a great crust!!! Me and my husband both really loved it!! I was so sad they were all out of pepperoni at target :( so I made it work with just pizza sauce, ground beef, and cheeeeese :). It turned out deeelish!

Recipe for dough mostly from: Food.com

Ingredients
1 cup water, room temperature (I added 1/4 cup of water)
2 tablespoons olive oil
3 cups all-purpose flour
1 Tablespoon of sugar
1/2 teaspoon garlic powder
1/2 teaspoon italian seasoning
1/2 teaspoon onion powder
1/2 teaspoon salt
1 1/2 teaspoons active dry yeast
Change Measurements: US | Metric

Directions:

1 Layer in bread pan according to manufacturer's recommendations.
2 Select'dough' setting.
3 When dough cycle is done, pat dough into greased 12x15-inch jelly roll pan.
4 Prick dough with fork.
5 Bake in preheated 400 degree oven for 7 minutes.
6 Remove from oven and add desired toppings.
7 Baste crust edges with butter and garlic powder.
8 Return to oven for 15-20(10 minutes was good probably because I separated my dough into two to make the crust thinner) minutes or until cheese is melted and crust is done.

Recipe for ground beef: food.com

1/2 lb lean ground beef (I used 1 lb to cover two pizzas)
1 onion, chopped (I used onion powder)
3 garlic cloves, minced ( I used garlic powder)
1/2 teaspoon dried oregano (I used ground)
1/4 teaspoon salt
1/4 teaspoon fresh black pepper
1/4 cup pizza sauce
3/4 cup cheddar cheese, grated ( I might have gone cheese crazy on these pizzas woops forgot to measure)
3/4 cup mozzarella cheese, grated

Directions:

1 In a skillet, cook ground beef, onion, garlic, oregano, salt and pepper at medium-high heat, stirring from time to time, 3 to 5 minutes or until beef is no longer pink. Drain any fat. Set aside.
2 Spread sauce on the pizza dough. Garnish with beef preparation and sprinkle with cheddar and mozzarella cheeses.

Easy Chicken Spaghetti

This is a favorite in our home! Quick, healthy, and good. Nough said ;)

Recipe Serves 4-5

1 Jar of Ragu Romano and parmesan
whole wheat spaghetti
3 chicken breast cut into cubes
garlic powder
1 tbsp olive oil
onion powder
ground black pepper

Directions

1. Cut your chicken into cubes, then mix with 1 tbsp of olive oil, garlic powder, onion powder, and black pepper.

2. Start cooking pasta according to directions on package.

2 Over medium-high heat in a sauce pan, cook chicken until done, then pour in your sauce and heat through.

Simple as that!

Whole Wheat Pancakes

These were... tolerable... I froze a bunch so we will see if they get better.

Next morning review- ok these were actually good ! I froze the rest yesterday after making them and popped one in the toaster this morning! how fun right!? They were good yay!! I'm happy now!

They were about 90 calories a pancake.. so that's good.. right.. somethin good.. haha maaan I need a yummy pancake recipe!!

Whole Wheat Pancakes
2 c whole wheat flour ( I used 1 cup of whole wheat flour and 1 cup of white flour)
2 T sugar
4 tsp baking powder
1/2 tsp salt
2 c skim milk
2 eggs
2 T canola oil
1 1/2 tsp vanilla

Turn griddle onto medium. Stir all ingredients together until smooth.

*I like to let my batter sit for about 5-10 minutes here. It just seems to thicken slightly and not be so runny.

Pour 1/4 cup of pancake batter on hot griddle. When the bubbles form and when it is brown on the bottom, flip it!
