Oatmeal Blueberry Muffins!

Oh maaaan I can't wait to wake up and have one for breakfast!! They smell soo good!! My husband had 2! yess!! I'm going to try mixing bananas in next time to mix it up ;)

Recipe Adapted from Taste of Home

Makes 12 muffins / about 147 calories each! yess!!
Ingredients

* 1-1/4 cups all-purpose flour
* 1 cup quick-cooking oats (I used old fashioned oatmeal)
* 1/2 cup packed brown sugar ( I used light brown sugar)
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon baking soda
* 1/4 teaspoon ground nutmeg
* 1 egg, lightly beaten
* 1 cup (8 ounces) plain yogurt ( I used vanilla yogurt)
* 1/4 cup butter, melted
* 1 cup fresh blueberries

Directions

* In a large bowl, combine the first eight ingredients. Combine the egg, yogurt and butter; stir into dry ingredients just until moistened. Fold in blueberries.
* Coat muffin cups with cooking spray or use paper liners; fill three-fourths full with batter. Bake at 400° for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.

Barbecue Meatloaf

Holy MOLY! This was goood!!! My husband was like.. geeez this is soo good! That's what I like to hear baby, that's what I like to hear! And it's sooo easy, yall know I like easy mmmmmk!

Recipe Adapted from: food.com

If divided by 5 it's around 212.8 calories!! yess!! We got 6 slices out of it. I need to find a good side to go along with it... because the corn concoction I came up with was.. not good..

Ingredients

1. 1 lb 93% lean ground beef ( I used 93% lean ground turkey )
2. 1/2 cup barbecue sauce, divided ( We picked up some barbecue sauce in a jar at Spring Creek Barbecue!!)
3. 1/4 cup frozen chopped onions, pressed dry ( I used onion powder )
4. 1/4 cup italian seasoned breadcrumbs
2. large egg whites

Directions

1. Preheat oven to 375 degrees

2. Combine meat, 1/4 cup barbecue sauce, onion powder, breadcrumbs, egg whites, and seasons of your choice in a large bowl( I didn't know what else to add... so I didn't..); mix well with hands.

3. Shape mixture into a loaf pan. Spread remaining 1/4 cup barbecue sauce over loaf.

4. Bake at 375 for 40 minutes or until desired degree of doneness.

Lasagna Skillet

Talk about an easy ONE DISH dinner!! Yesss! I asked my husband,,,"alright what would you rate it..??!!" and he said 8 1/2 to 9!! whaaat! yesss! I got home at around 5:35 pm last night from work and had to leave for school at 6:30 pm! I started this dish at around 5:50pm and finished at around.. 6:25 start to finish that's pretty good!

I got the recipe from a Healthy Cooking magazine Taste of Home, aug~sept 2010. The lady who submitted is Lorie Miner from Kamas Utah.

For 5 servings I calculated about 273 calories per serving! yess!

Ingredients
1. 1/2 lb. Italian turkey sausage links, casings removed(I used 3 links.. 2 just didn't seem like enough..)
2. 1 small onion (omitted and used onion powder)
3. 1 14 oz jar of spaghetti sauce ( I used 2 Hunt's sauce no salt added cans)
4. 2 Cups uncooked whole wheat egg noodles
5. 1 cup water
6. 1/2 cup chopped zucchini ( I used dried spinach.. because my husband came with me to the store and got me all unorganized.. sheesh .. haha.. so of course I forgot the zucchini)
7. 1/2 cup fat-free ricotta cheese( I couldn't find fat-free gosh darnit! so I got one that had 80 cals per 1/4 cup)
8. 2 Tbsp. grated Parmesan cheese
9. 1 Tbsp. minced fresh parsley or 1 tsp. dried parsley flakes ( wow so I guess I didn't have to used as much dried basil I did in the Italian Pasta Bake.. oh well..)
10. 1/2 cup shredded part-skim mozzarella cheese

Directions
1. In a large nonstick skillet, cook sausage and onion over medium heat until no longer pink; drain. Stir in the spaghetti sauce, egg noodles, water and zucchini.
Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until pasta is tender, stirring occasionally.

2. Combine the ricotta, Parmesan and parsley, Drop by tablespoonfuls over pasta mixture. Sprinkle with mozzarella cheese; cover and cook 3-5 minutes longer or until cheese is melted.

Spicy Grilled Boneless-Skinless Chicken Thighs

Last night's dinner was pretty good, I wouldn't say it's a favorite. I'm starting to feel sorry for my husband. Poor guy.. We ate these thighs with a side of boring broccoli... steamed and good.. just boring. I think I kind of messed up the marinade.. that would be better on chicken breast ...Crap! I'm starting to get a little discouraged with cooking yummy and healthy.. hopefully it gets better..

These thighs are 120 calories for 4oz, I had 2 that came out to 4.2 oz which is 123 calories + the marinade comes out to about 175.5 calories! With a side of steamed broccoli the meal totals out at around 205 cals!

Lazy Couple of Weeks..

I don't know what happened the last couple of weeks... I have got to get a hold of myself! So these are the things I've cooked this week Sorry it's been a while since I posted a yummy recipe :( not that great of a week.. Next week looks promising . hopefully I will get to share the recipes with yall

Tuesday- chicken spaghetti (always good, and way too easy haha) not good picture :/

Wednesday- Turkey burgers (gross, probably because I used the hamburger seasoning packet... never again! you should of seen my husband eating them... sorry honey!) w/ sweet potato non crispy :( fries, too bad I found a method(corn starch, and on a cookie rack) to make them crispy AFTER I made them.. one burger patty = about 160 calories + 4 oz of fries... about 200 calories... total meal about 360 :) not good that I ate a bunch of homemade peanut butter cookies after :( I have got to get control of myself.. haha crap!

Italian Pasta Bake

Wow! This had so much flavor! Yummy!! I really felt like I was in Italy eating this.. My husband loved it! He had three servings of this dish! I can't wait for lunch tomorrow that's for sure!

The recipe said it serves 8 for 413 calories per servings which isn't bad at all :) but if you wanted to divide it by 12 to save room for that dessert.. its only 275 calories per serving!! And it's still a niiice serving size!

Ingredients
1(1-pound) package uncooked ziti (tube shaped pasta)
1 pound hot turkey Italian sausage (they didn't have hot at the store so I just used sweet)
1 cup of chopped onion( I minced it so my husband couldn't tell I put onions in there.. I definately didn't used 1 cup I used like... maybe 1/4 cup)
2 garlic cloves, minced
1 tbsp tomato paste
1/4 tsp salt
1/4 tsp pepper black
2 (14.5 ounce)cans petite-diced tomatoes, undrained
garlic powder
onion powder
crushed red pepper
cayenne pepper (we like things hot)
1/4 cup chopped fresh basil ( I tried to find fresh basil... but they didn't have it!! so I had to use half of my bottle of basil like the one below.. :(... but it was worth it!)
cooking spray
1 cup(4 ounces) shredded mozzarella cheese
1 cup(4 ounces) grated parmesan cheese

Directions
Preheat oven to 350 degrees

Cook pasta according to package directions, omitting salt and fat. Drain pasta, and set aside.

Remove casings from sausage. Cook sausage, onion, garlic, in a large nonstick skillet over medium heat until browned, stirring to crumble. Add the tomato paste, salt, pepper, garlic powder, onion powder, crushed red pepper, cayenne pepper and tomatoes, and bring to a boil. Cover, reduce heat, and simmer 10 minutes, stirring occasionally.

Combine cooked pasta, sausage mixture, and basil. Place half of the pasta mixture in a 4-quart casserole coated with cooking spray. Top with half of mozzarella and half of parmesan(I would do the parmesan first then the mozzarella for both layers). Repeat layers. Bake at 350 for 25 minutes or until bubbly.

Turkey Sloppy Joes

Last nights dinner was easy smeezy turkey sloppy joes! Yummmmy! I could probably live off these.. no lie! I had one for lunch today too!

Recipe: 1 bun = 120 calories and the sloppy meat mixutre when divided by 8 equals about 109 cals... so total sloppy = 229 calories! yess!! I love sloppy joes! so even if you wanted to divide it by 6 then 1 sloppy with bun would be about 255 calories!!

Ingredients
1 lb 97 % fat free ground turkey
1 Sloppy Joe Mix seasoning packet
1 6 oz can of tomatoe paste (I got no salt added, don't want puffy fingers.. or heart problems mmmk )
1 1/4 cup water
8 Buns 120 cals each( I got white.. because its the same calories as wheat..)

Directions:
Brown the turkey meat in a sauce pan over medium high heat, then add sloppy joe seasoning mix, tomatoe paste, water, bring to a boil then let simmer for 10 minutes to thickin it up a bit.

Baked Chicken Parmesan

Another really easy and fast meal! And yes that is a piece of Texas Toast served beside the pasta dish... I tried to look up a more homemade version ok!! ... but I just love that Texas Toast! The chicken and marinara concoction went really well with the egg noodles as the pasta. Happy to say we have another great dish to add to our menu to pick from! If I was watching my caloric intake last night... I probably wouldn't of served myself so many of those egg noodles... maybe even no egg noodles... and just the chicken and sauce.. with the Texas Toast.. I'm sorry but the texas toast is worth the 150 calories! I'll probably try this with whole wheat pasta next time.. oooh or try it as a panini! That would be fun!

Baked Chicken Parmesan

Serves 2

Ingredients:

6 chicken tenders (or 2-3 chicken breasts)

salt & pepper

garlic powder

onion powder

1 jar marinara sauce

1/4 cup parmesan cheese

1/2 teaspoon dried basil (I probably used 1 tsp)

1 cup Mozzarella cheese

2 servings cooked pasta( I used 1/2 lb of egg noodles)

I served ours with a side of Texas Toast!

Directions:

1. Pour marinara sauce in an oven-safe baking dish.
2. Add the parmesan cheese and basil to the sauce, then stir to combine.
3. Lightly season chicken with salt, pepper, garlic powder, and onion powder then nestle it into the sauce mixture, covering it completely with sauce.
4. Top with mozzarella cheese and cover loosely with foil. Bake at 400 degrees for 20 minutes. Remove foil and bake for 10 more minutes, or until chicken is cooked through. Serve on top of cooked pasta.

Cajun Shrimp Over Rice

This meal was so good! Quick, easy, super yummy, and healthy! It took 20 minutes on the dot! That's what I'm talkin about! And my husband was scraping the plate to make sure he got it all.. haha he cracks me up.. I'm like I guess you liked it huh? haha

Recipe Adapted From: Food.com

I served myself 1/2 cup of rice which equals 100 calories and 3 oz of shrimp which equals 100 calories which equals a 200 calorie meal! wow!

14 oz of Frozen shrimp (I thawed them in a colander for 5 min under cold water)
1 tsp paprika
3/4 tsp dried thyme
3/4 tsp dried oregano (I used ground)
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
2/4 tsp cayenne pepper
1 tbsp vegetable oil
1 1/2 cups of long grain rice, uncooked

Directions:

1. Start cooking your rice as directed on the package

2.Combine first 8 ingredients in a large zip-top plastic bag; seal bag and shake to coat.

3.Heat oil in a large non-stick skillet over medium high heat until hot.

4.Add shrimp; saute 4- 5 minutes or until shrimp are done.
